One of our specialties is Sulphured Sun-Dried Tomatoes. These tomatoes undergo a specific drying process that involves the use of sulfur dioxide (SO2). Sulphured Regular Dried Tomatoes have a 18-23% moisture content and are treated with SO2 at a 2500-3000 ppm concentration. The fresh tomatoes are dried with salt for 5-7 days before being washed, cleaned, and selected in our factory. The resulting Sulphured Regular Dried Tomatoes are available in various shapes, including halves, julienne cut, and diced, and are packed in bulk 10 kg boxes or vacuum bags of different sizes.
Sulphured Ready-to-Eat (RTE) Tomatoes
Another variation of our Sulphured Sun-Dried Tomatoes is the Sulphured RTE (Ready To Eat) Dried Tomatoes. These tomatoes have a higher moisture content of 35-40% and SO2 concentration of 2500-3000 ppm. The regular dried tomatoes are taken into our factory and
transformed into RTE tomatoes. These tomatoes are mainly used in restaurants, hotels, and other food establishments. They can be served directly in salads, pizzas, and pasta or used as a sub-product in various industrial processes. The Sulphured RTE Dried Tomatoes are available in shapes such as halves, julienne cut, and diced, and are packed in bulk 10 kg boxes or vacuum bags.
Production Process
The production of Sri Lanka Sun-Dried Tomatoes begins with the sun-drying process. The tomatoes, harvested during the months of July and August, are delivered to our drying facility in plastic cases. Under the supervision of quality control experts, the tomatoes are inspected to meet the required standards. Only the best tomatoes are selected for the drying process.
The selected tomatoes are then placed on cleaned nets and tarpaulin. They are carefully arranged in rows with walkways in between to allow for regular inspection. The tomatoes are left to dry in the sun for 3-5 days, protected by barriers that prevent foreign bodies from contaminating them. The drying process is closely monitored, and all workers must disinfect their hands regularly to maintain hygiene.
After the tomatoes have dried to the optimum moisture levels, they are collected and left for a few hours. They are then passed through a rotating sieve to remove foreign bodies that may have deposited on the fruit during drying. The tomatoes are finally packed into jute bags after being fumigated under plastic sheeting. They are weighed and moved into cold storage to await packaging and delivery.
